In this edition of Meet The Chef, Tom Younger tells The Sybarite about how his mum shaped his career, his passion for wood-fired cooking, and how he approaches sustainability in the kitchen.

Pasta Week: Ten Tables, No Restraint

20th October 2026

National Pasta Day falls on 17 October; World Pasta Day follows on the 25th. Strictly speaking, the first is an American observance, but London has never needed much encouragement to book another Italian. Eight days gives us a respectable window for crab-filled ravioli, slow-cooked ragù and truffle, with ten restaurants to work through and several shapes to learn beyond penne. There are regional specialists, neighbourhood favourites and new arrivals, so consider this your diary for the week. Leave some space between appointments.

Best Negronis In London For Negroni Week 2026

22nd September 2026

In 1919, according to cocktail legend, Count Camillo Negroni walked into Florence’s Caffè Casoni and asked bartender Fosco Scarselli to strengthen his Americano by replacing the soda water with gin. A man who looked at alcohol and thought, this needs less water. We respect that. The result was gin, Campari and sweet vermouth in equal measure. More than a century later, Negroni Week returns from 21 to 27 September 2026, and London has interpreted “three ingredients” rather loosely. Count Camillo started it. London has taken it from here.

Samyukta Nair’s new Thai dining room takes dishes people already know and love and treats them with the seriousness usually reserved for tasting menus and very expensive French sauces. There is no urge to dismantle, reinterpret or intellectualise them. Instead, Head Chef Soonthorn Apaipat concentrates on the harder stuff: balance, texture, heat, acidity and ingredients good enough to withstand very little interference.
