The Sybarite Team Dine At Sucre

Located inside a 300-year old building on Great Marlborough Street, Sucre is headed up by renowned Argentinian chef, Fernando Trocca. Still a relative newcomer on the London culinary scene, the restaurant has been charming diners since 2021, two decades after Trocca opened the original outpost in Buenos Aires. In 2022, Sucre opened a Dubai restaurant, The concept is simple but highly effective - contemporary Latin American dishes cooked over an open fire. Anyone who has experienced this kind of cooking knows just how delicious it can be - the words juicy and flavoursome spring to mind. The interiors are equally impressive, with chandeliers made from hand-cut glass decanters and antique furniture embellished with Latin-inspired fabrics. It’s a dramatic and opulent setting, with added theatrics from seeing the chefs at work within the open-plan kitchen. Soaring flames and the scent of sizzling meats makes for a truly immersive experience. Downstairs lies Alma, the basement bar with a penchant for mezcal and tequila. Its subterranean location makes it feel like a hidden gem, while the cocktail list caters to a wide variety of tastes, adaptable to any mood or occasion. Alma strikes a careful balance between championing artisanal producers and prioritising innovation. Drinks aside, the venue is establishing itself as a cultural hub as well, with live salsa nights, Latin House DJs and various pop-up events taking place across the calendar. Meet The Chef: Lisa Goodwin-Allen Of Northcote

Having worked at Lancashire's Michelin-starred country hotel Northcote since 2001, Goodwin-Allen knows a thing or two about dedication. In 2004 at just 23-years old, she was named the venue's Head Chef, before moving up to Executive Chef in 2017. In February 2024, it was announced that the restaurant had retained its Michelin-star under her helm. It proved to be a very busy year for the acclaimed chef, who, in November 2024, became the first celebrity female chef to head up the culinary experience for guests at Allianz Stadium's luxurious East Wing. Her lineup of fine dining dishes started with refreshing ChalkStream trout - a heritage British fish slow grown and plucked from the Test and Itchen Rivers in Hampshire - accompanied by punchy horseradish, winter pickles and fennel pollen. The main course was a succulent cut of Cumbrian roasted lamb, served alongside a sticky meatball, spiced carrot and feta. The best, perhaps, was saved until last. An visual masterpiece saw a Clémentine recreated entirely from Valrhona chocolate opals and thyme. An edible work-of-art that tasted as good as it looked, melting in the mouth in a a delightful, citrusy burst. Of course, while it's easy to wax lyrical when it comes to Goodwin-Allen's culinary chops, this is just one meal of many. Below, we talk to the chef about her love of Lancastrian cuisine, gender-equality in the hospitality industry and her advice to aspiring young chefs...
Ekstedt at the Yard — Nordic Flavours and Open-Fire Cooking

Enter Ekstedt at the Yard, acclaimed Swedish chef Niklas Ekstedt’s first venture outside of his home country. Housed in Westminster’s Great Scotland Yard Hotel, the fire-focussed restaurant brings innovative Scandinavian techniques together with British seasonal ingredients to create an experience like no other. On our visit this autumn, we had the pleasure of trying out the Journey to Scandinavia menu, a 5-course tasting menu where all ingredients are cooked on an open fire. Our experience included sommelier-selected wines for my guest and a mocktail pairing for myself. Despite being pregnant, I did not feel like I was missing out on any of the amazing dishes that were served as the team went above and beyond to provide alternative options that were just as flavourful and complex.

I am horrible at directions. I think about this every time my eyes are glued to my phone as I follow the route CityMapper has planned for me, despite the fact that I might be going somewhere I’ve been a million times before. Because of this, I don’t even notice important buildings or familiar signs that may make my next journey easier—but restaurants, now those are my landmarks. My husband always says I navigate London through food—if you ask me how to get somewhere, my directions will sound a little something like this: “Turn onto Great Eastern Street and keep Shoryu on your left-hand side, walk towards Pachamama East and right before you get there, you’ll want to cross the road to get to Gloria which will be on the corner on your right.” Thank you, come again.

I remember a time when restaurants were finally allowed to reopen after the pandemic, and everyone I knew was scrambling to get a reservation at their favourite place. Then came the post-pandemic peak in dining out, with groups wanting to catch up with each other after months in isolation, resulting in having to book weeks or months in advance for the city’s top spots. And now we’re seeing another shift in dining habits — the cost of living crisis coupled by the huge struggles restaurateurs face in hiring talent has given birth to the newest trend we’re seeing across the capital: set menus. This autumn, I visited Oklava, the Turkish-Cypriot corner restaurant in Shoreditch that I have dined in many a time. Chef Selin Kiazim and co-owner Laura Christie are no strangers to making changes when the going gets tough; they started trialling a set menu for their diners as early as last year in addition to scrapping the controversial service charge that gets added to guests’ bills. For my visit, I was excited to try Oklava’s new evening set menu, which Kiazim created to highlight seasonal ingredients as well as her famous flame-led cooking techniques, whilst ensuring guests leave with an experience that they’ll want to return to time and again.

Her Shoreditch restaurant Oklava is a local favourite, with guests gathering around to devour her Turkish-Cypriot dishes fresh from the wood grill and stone oven. I’ve dined at Oklava multiple times and am always in awe at the layers of flavours and textures in Kiazim’s food. “I come from a food-loving—and food-sharing—background anyway; big family barbecues with tons of food are the mainstays of Turkish-Cypriot Sundays. I started cooking early on too—by the age of about 13, I was throwing dinner parties for friends, making my parents leave the house or the kitchen for the night. I would spend weeks preparing for these dinners, watching all the cooking programmes I could find and making notes on how to make old school things like crepe soufflés,” she shares. However, Kiazim didn’t automatically think about a career in hospitality and started off doing an Art foundation course. She soon realised her passions lay elsewhere and she got over her fear of the stereotypical chef’s life with long hours and aggressive bosses and found her calling in catering college.

With strong ties to Ghana, we have high expectations, and although we understand that these are hard to meet off the continent, the search never truly stopped. Enter, Akoko. Akoko offers West African cuisine, reimagined. Located on Berners Street in Fitzrovia, the open kitchen welcomes you in with a buzzing kitchen staff and the delicious smells transport you straight to the bustling streets of Accra/ Lagos. Opened by British Nigerian Aji Akokomi last year (a year later than planned, thanks to Covid), Akoko has gone from strength to strength. Opening initially with Masterchef’s William Chilila, world renowned chef Theo Clench joined the Akoko family permanently as head chef this summer. Akokomi’s aim was to merge art and food, and the restaurant is an exemplary example of how the two mediums can work so well together. With artists from all over the continent, including Niyi Olagunju and Rahman Akar, the earthy wooden tones, yet contemporary setting, creates the perfect backdrop for the delicious bite-size food flying around the restaurant.

This is certainly not the type of place I would normally venture into. It’s location makes it feel like it’s going to be a bit of a tourist trap, however what I found during my visit was positively surprising. I’d booked for lunch with a friend and when I arrived the restaurant was positively heaving. Not surprising I suppose when you consider it’s prime spot on Wardour Street, just a chopstick throw away from Piccadilly Circus and Leicester Square. It may well be a cliché but you still can’t help feeling positive when you see Chinese eating in a Chinese restaurant.

This coincided with World Sake Day (1st of October), called Nihonshu no Hi in Japanese, to commemorate Japan’s favourite rice wine beverage. The Sybarite was invited to the launch of a three-day pop-up event in Shoreditch which was hosted by JFOODO in collaboration with London seafood restaurant The Oystermen. The Sake & Seafood event welcomed us to “Escape the Ordinary” and discover that although seafood is traditionally accompanied by white wine, sake actually makes for a better pairing.

The restaurant which earned its Michelin star in 2014 has been on my foodie radar for a very long time and finally, for my 6th wedding anniversary, the time had arrived to grace my tastebuds with its culinary delights. One of the first things to strike you upon arrival is the small, unassuming dining room. It’s not the grand interiors you’d perhaps expect when you walk through the big blue doors. No airs and graces – A sign from the start that the food will be doing all the talking. The high ceilings, dark wood and pale walls make up the simple decor. The beating heart of the room, though, comes from the blue-tiled open kitchen where Chef Isaac McHale and his brigade produce wonderfully original food.

In partnership with Champagne powerhouse Laurent-Perrier, the team at Angler, led by Chef Gary Foulkes, has launched a holiday pop-up called “A Glistening Christmas”. The Sybarite was invited to kick off the festivities, learn more about Laurent-Perrier’s unique history, and taste the winter warmer dishes that Angler has paired with the Laurent-Perrier offering. We made our way to Angler’s heated rooftop terrace which was decked out in lights, greenery, and rose gold baubles. The colour scheme reflected one of the stars of the evening, the Cuvée Ros. Launched in 1968, the Laurent-Perrier team told us about how the brand’s focus on continuous innovation led to the creation of what is considered to be the original “modern” rosé Champagne. We were welcomed with some Winter Cocktails, namely The LP Winter with Laurent-Perrier La Cuvée, honey, sloe gin, lemon juice, clove, rosemary, and berries; and the Rosé Mémoire with Laurent-Perrier Cuvée Rosé, redcurrant jelly, clementine juice, and redcurrants.

Franco’s Head Chef Stefano Turconi noticed the trend in plant-based diets and the increase in requests from his customers who were in need of vegetarian and vegan options. “I personally love meat and fish, however, in advance of creating this new and exciting menu, I chose to adopt a plant-based lifestyle for three months, where I was able to really appreciate and understand what vegans enjoy eating. In doing so, this really inspired me to develop our new vegan-vegetarian menu at Franco’s where we are able to offer a wide range of dishes,” he says.

We returned home feeling completely rejuvenated and relaxed. From the mesmerizing colour of the water to the mouth-watering local cuisine, everything oozed luxury. For the first part of our trip, we stayed at The Residence, an exclusive and secluded retreat of unparalleled beauty in Falhumaafushi, a pristine island located in Huvadhoo Atoll one of the largest and deepest atolls in the world. After a 10-hour flight with our little boy, we were greeted by a representative from the Residence who took our luggage away for us and escorted us to the air-conditioned lounge. The hotel is located 242 miles south of Male International Airport, so after a cold drink, we boarded the scenic 55-minute flight to Kooddoo airport. This was then followed by a short mini-bus ride and speedboat direct to the resort.
